NUEVA VIZCAYA is the last province
between the Sierra Madra and Cordillera mountains ranges
before Cagayan Valley gives way
to the rolling plains of Central Luzon.

The town of Bagabag
is small, sleepy and surprisingly
delicious.

Linda's Restaurant specializes in "Igat" (eel)
and "Dinakdakan" (grilled pig parts composed of... well, parts!).

An average lunch includes "Papaitan" (cow parts in bitter soup), rice,
3 dishes for sharing (try also the "Pakbet" and "Adobo")
plus ice-cold Pepsi.
It all comes to a princely sum of PhP80 per person
or a little less than USD2.

(Just remember NOT to ask what the strange "parts" are...)

On the epic 13-hour road trip between my hometown of Tuguegarao,
and the sprawling Metro Manila metropolis,
where better to pause for respite,
enjoy a brief rain shower,
and say hello to a friendly carabao

or two?
