Fabulous "Last Supper" at Aqua, Hong Kong

Aqua is one of my favourite restaurants, honestly. Every visit is familiar, yet new.

I like to call Aqua "snobbish" coz it's glam quotient is seriously unmatched, like, anywhere else in the world. It sits like a glittering, giant ruby atop One Peking, with spectacular views of the iconic Hong Kong skyline.

So, back to being "snobbish." The word's a serious disservice to the Aqua team, though, because I've never come across a warmer, more solicitous lot. Aqua's General Manager is the fabulous Simon J Mckinless, who filters his fabulous energy to everyone - hostesses, servers, bartenders. As a guest, what choice do you have other than feel... fabulous? That's it. Out with snobbish, in with fabulous.

Last Thursday, we had a "Last Supper" at "The Flag" - that's how Simon likes to call Aqua. After all, this is the restaurant that birthed an empire of top-tier hospitality brands spanning Asia and Europe, including Hullett House, Wasabisabi, La Marmite, Tivo, etc.

Dinner was... what else? Fabulous. Nothing beats the divine pairing of sashimi and champagne, natch. I had a lot more to eat than that, but who's ungentlemanly enough to make me own up to my terrific calorie intake?

Aqua will be closed for renovation from the 6th of August 'til mid-October.

After the dust will have settled and the doors open to a refreshed Aqua, there's nothing else to expect but... (all together, now) Fabulous.

I can't wait.
