Anybody who knows me, knows my appetite - perhaps none better than FINDS' Executive Chef Jaakko Sorsa, himself. Jaakko is a dear friend who has generously fed me on my countless moments of desperate hunger. That's, like, every day. Five times a day. I was FINDS' Marketing & PR Manager over three years. The amount of food I've enjoyed from Jaakko's benevolence would have been enough to feed a small village throughout a season of catastrophic drought. Because of this, the mere sight of Jaakko sends my dopamine levels shooting through the roof. Jaakko's smiling face is a neurotransmitter that tells me I won't simply be eating; I'm going to feast. Therefore, I'm a terrible critic when it comes to Jaakko's food.

I am not a real food critic, either. I'm just a food addict. That's why I got myself a job in a restaurant, in the first place. And so while real crits may pause thoughtfully between mouthfuls to consider taste, texture, portion and presentation, I'm too busy either shoveling entire platefuls down my esophagus or wondering when the next dish is arriving.

That having been said, I have seen how Jaakko's food has evolved and matured to a point where he's serving up complex Northern European dishes as though they were chapters in a whimsical Nordic fairy tale.

"This could have gotten so old, so quickly," I whispered to Adele Wong, HK Mag's dining and lifestyle editor. "I usually think food that requires an introduction - or a set of instructions on how to eat, much less! - is too pretentious for me to eat. I'd rather die from hunger than order a dish whose name I can't pronounce. Just sayin'."

OK, so that last line was a total lie. I'd eat anything. Besides - let's be honest - who knows a lot about Nordic gastronomic tradition, anyway? Not me. And as iconic as FINDS is - its 10th anniversary comes up in spring 2014 - it's not exactly propped up by a cottage industry of Nordic product and service providers that all together help to educate an entire populace. Aside from FINDS, the only other Nordic brands I have relationships with are H&M and Ikea.

Nordic Express is a 12-course magnum opus through Finland, Iceland, Norway, Denmark, Sweden and Lapland. The menu is presented with an illustrated map featuring with a "pin drop" on where dishes on the menu come from. Jaakko then introduces each dish with a story - about the ingredients, about the fishermen, about a country's history and culture - often, personal. The rowanberry jelly that comes with wild game pate was made just 10 days prior to our meal, by Jaakko and his mom.

The food is delicious.

The style - eye-popping, whimsical, fresh, enjoyable, incredible. Nordic topography comes alive on the table, with rocks, branches of birch, moss and herbs so supple, they might as well have been picked from Jaakko's garden mere minutes before they were served.

I've never experienced anything like it before.

I know FINDS intimately; I helped shape (rescue?) it. It has had its moments of identity crises. That tends to happen when a brand starts off with three (!!!) managing directors, a very strong general manager, and a genius in the kitchen. Who prevails, and when?

Nordic Express is the journey we've been waiting for all this time. It has just the one train driver. His name is Jaakko.

It has taken almost a decade to get here.

And it's worth the wait.

THE ROYAL MEN'S FACIAL FROM THE MANDARIN BARBER.

I got a really awesome treat from The Mandarin Barber for my birthday: a rejuvenating Royal Men's Facial. It features chilled stones being rolled onto the skin using smooth massage movements, preparing it for a glamtastic 24-carat nano-fold mask that promises to reduce the appearance of fine lines.

“How’d you like it?” Nina Colls, The Mandarin Oriental’s Director of Communications bussed me on both cheeks as I emerged from the treatment room.

“I feel asleep,” I said sheepishly. “Don’t remember much.”

Actually, that’s a lie. I remember waking up from my own snoring.

I had just organized HK Mag’s epic 1,000th issue celebration event at an outdoor lot in Causeway Bay, then traveled to Manila a few hours later to host my cousin’s wedding. I was back in Hong Kong less than 24 hours later, virtually running just on adrenaline. My skin was dull and gray and lifeless - like dried fish. 

I snapped a selfie immediately following the facial and Whatsapped it to my mom. She wanted to fly to Hong Kong that very moment to have the same treatment. I looked like I slept for 3 days straight. My skin was soft and supple and plump - loaded with moisture. Even my eyebags seemed to disappear. I couldn’t stop poking my cheeks, like that girl in the Fancl ad.

And I do remember that my therapist, Shanti, applied lip balm to my dry, chapped puckers. Sensing that my cuticles might be dry, as well, she brushed a bit of oil over them. Talk about TLC! I mean, who else does that for you??

“Happy birthday!” The receptionist waved prettily as I left the Barber. 

“I’ll email you with more info,” said Aqua Chiu, the Mandarin’s Social Media Manager, as she put me into a cab.

HONGDAE GUESTHOUSE, SEOUL

FEELING LIKE A HONGIK HIPPIE ALREADY!

My sister, Teri, booked me into Hongdae Guesthouse. It's a little B&B that's just half an hour away by metro from Incheon Airport. I got off at the Hongik University Station Exit 1, turned around to see Dunkin Donuts, entered the building, and took the lift to the third floor. Voila. I was in Hongdae, which marked the beginning of my  very short Seoul sojourn.

My bed (number 3, on the lower deck) cost only USD38 for 2 nights. Shared bathroom (bring your own toiletries), desktop, and water dispenser. All good. Only complaint: there was no curtain in front of my bed. It had disappeared and clearly hadn't been replaced. Light from street lamps spilled into the room in the evenings, mostly onto my bed. But I was only staying for 2 nights, so whatever. All part of the cheap and cheerful experience!

Being within the vicinity of a university known for art and architecture, the area is dotted with quaint design shops, cafes, book stores, fast food eateries, and even a bustling night market (more on that on another entry - my solo Seoul bender!)

If you're doing Seoul on a shoestring, Hongdae Guesthouse is perfect. Great district, centrally located, very convenient and accessible. Just be wary of the design shops - quaint establishments that defy description. They're hipster hangouts that also sell books, DVDs, perfume, cake, paintings, calendars, watches, whatever. Always check prices before you head over to the cash register. I decided to have a beer in one such place and ended up paying USD12. I could have paid USD3 in the pub just across.

I saved money on accommodations but blew my budget on just the one beer. Classic.

Our first night in Osaka was a tragicomedy that involved a bottle of Bombay's Sapphire gin in our cute room at Best Western Shinsaibashi, some really terrible "kerosene chicken" (because Emma and Chris refused to eat raw chicken - duh!) in an unknown Japanese eatery, and me leaving said eatery in a huff. Drunk, angry, hungry, lost, and without a yen to my name.

I think I might have wandered off to find a money changer; all I had was a few Hong Kong dollar bills. Lucky me, the currency exchange counter in Daimaru had already closed and I had no choice but to find my way back to our toybox of a hotel room. Emma and Chris walked in a few minutes later with a "peace offering" - a Sapporo Beer King Can. We drank some more amid what seemed to us then like gut-wrenching discussion.

"Speak to him, Ems," Chris implored. "You're much better at it than I am!"

"You have to promise," Emma insisted, "that what we spoke about tonight will stay in this room will never be spoken about again."

"I promise," I said.

"Good," she sighed. "God, gin such a downer!"

I was practically blind the next day. I think I might have flushed my contact lenses down the drain the previous night - but who knows what might have truly happened??

The entire morning was drenched in blazing sunshine, with but just a few clouds to soften the assault. We struggled with Osaka's tangled network of subway lines. I suspect it was exactly what we needed to clear the previous night's cobwebs away.

We left Sheung Wan at 9.30pm to have a pre-departure dinner at Volume HEAT. Handsome Portuguese maitre d' Fernando looked well after us, rushing to help carry our luggage off and on to our cab towards the Airport Express. By this time, Chris, Emma and I had finished three bottles of wine.

Our flight left Chek Lap Kok International at 1.30am. We touched down the Osaka Budget Terminal three hours later, making for a very early breakfast at hip airport eatery, Pronto. The style is a relaxed hybrid of Scandinavian and Japanese sensibilities.

We passed out for a nap at the gate, until we heard our boarding call for Sapporo.

Arrived in Sapporo at 11.30am, had tempura lunch at the airport, and jumped into a bus for Niseko at 1.30pm.

Three hours later, here we are.

Yukimi.

Our home for the next seven days.

Our friends were nice enough to let me and Chris have the suite at the top floor.

I'm exhausted.

And I'm happy.
